Clams Vinaigrette over Pasta image

Another of my husband's "spur of the moment, see what we have in the pantry" recipes! I love how he can do that. LOL This is quick, easy & delicious!

Number Of Ingredients 6

6 oz jar of roasted red peppers
1/2 - 1 lb whole wheat thin spaghetti (or pasta of choice)
6 1/2 oz canned clams in juice
1 small onion, chopped
1/4 c romano basil vinaigrette (wish bone brand)
1/4 c olive oil, extra virgin (a little more if needed)

Steps:

  • 1. In a large pot, cook spaghetti until done, according to directions on box
  • 2. Meanwhile, in saute pan, cook onions & red peppers until tender in a little olive oil.
  • 3. Add in olive oil, clams with juice & vinaigrette. Simmer until heated through
  • 4. Add pasta to a large bowl. Top with clam sauce & toss thoroughly. (If it seems not juicy enough, you can add a little extra olive oil.)
  • 5. Serve with a hearty crusty bread & green salad.
