Number Of Ingredients 15

SALAD
1 bunch mixed greens
1/4 medium pomegranate arils, removed
2 small clementines
2 small radishes, sliced
Feta cheese
sunflower seeds
fresh cilantro
DRESSING
3 Tbsp fresh lime juice or lemon juice
3 Tbsp olive oil, extra virgin
3 Tbsp honey
1 tsp Dijon mustard
1/4 tsp chili powder
1/8 tsp sea salt

Steps:

  • 1. For Dressing: Mix the last six ingredients to make your dressing.
  • 2. Chill.
  • 3. For Salad: Prepare greens, radishes, and clementines. I use a mix of mixed greens, kale, spinach.
  • 4. Remove pomegranate arils.
  • 5. Place greens in a bowl with salad ingredients.
  • 6. Optional, top with a cooked chicken breast.
  • 7. Drizzle dressing over salad.
