Steps:
- Bring water to boil in a medium aucepan. Remove from heat and stir in the cinnamon. As you stir, it will become shiny and pull away from the sides of the pot into a single mass. Add flour 1/2 cup at a time, stirring well after each addition. You may have to knead the last half cup of flour into the dough if it's too hard to stir. Turn out onto floured mat or counter and knead, adding flour as needed until it resembles a pliable cookie dough. Pinch off some dough and roll (or pat) out. Thicker seems to work better than too thin. Cut out. Make hole for hanging with a straw or pencil if desired. Leave to dry for a couple of days.
