Cinnamon Orange Chicken image

Tis is a great recipe for Weight Watchers only 4 points. This is delicious served with long grain and wild rice mixture. It's quick and easy- and oh so moist and delicious.

Number Of Ingredients 6

4 boneless,skinless chicken breast halves
1/4 tsp each salt and pepper
1/2 c mandarin oranges,drained and diced
1/4 c orange juice
3 Tbsp reduced sugar orange marmalade
1/4 tsp ground cinnamon

Steps:

  • 1. Flatten breasts to 1/4-inch thickness and sprinkle with the salt and pepper. Spray a large skillet that the chicken will fit in and spray the pan with non stick cooking oil. Place over medium heat.
  • 2. Add chicken and cook 4 to 5 minutes until golden and no more pink.Add remaining ingredients cook 4 to 5 minutes to heat through. Serve sauce over chicken and rice. check out my "seasoned rice mix / pat duran"
