Cinnamon Mascarpone Baked Pears image

This lovely, light pear dessert is simple, yet so refined. Baked in a little butter and brown sugar the pears alone are delish. Then they're topped with a dollop of a cinnamon mascarpone cheese mixture that's smooth and creamy. When done you could sprinkle these with a little more cinnamon and chopped nuts if you'd like.

2 medium ripe pears
2 tsp brown sugar
2 tsp unsalted butter
1/4 c white grape or apple juice
6 Tbsp mascarpone cheese
2 tsp white sugar
1/4 tsp cinnamon

Steps:

  • 1. Preheat oven to 375. Halve pears lengthwise and core.
  • 2. Place cored side up in a medium baking dish. Spoon 1/2 tsp brown sugar and 1/2 tsp butter into each cavity.
  • 3. Pour the juice into the baking dish.
  • 4. Bake for 25 minutes or until pears are tender.
  • 5. In a bowl, combine mascarpone cheese, sugar, and cinnamon.
  • 6. Top each pear half with 1 1/2 tablespoons of the cheese mixture and serve warm.
