Cilantro Lime Rice (Rice Cooker) image

I actually feel bad for posting this as it is so easy, but like me, there may be people that have never made this. This is a very good seasoned rice. When I gave mother in law (Thai) a bowl of this, she tasted it, set down her bowl of plain rice and ate this.

1 c dry jasmine rice, rinsed
2 Tbsp lime juice
1 clove garlic, smashed and finely minced
1/2 tsp olive oil
1/2 tsp salt
1 handful fresh cilantro, finely chopped

Steps:

  • 1. Add the garlic, rinsed rice, and water to your rice cooker, then set to Cook. After it has finished cooking and switches to Warm, fluff with a fork. Or use your preferred water to rice ratio.
  • 2. In a small bowl, mix together the lime juice, oil, and salt. Drizzle over the fluffed rice and add the cilantro, mix together until the cilantro and dressing is evenly distributed.
  • 3. Serve as a side with chicken or fish, a topping in a taco, in a burrito, many options.
