Cilantro Lime Coleslaw image

A Southwestern twist on traditional coleslaw.

1 (16 ounce) bag coleslaw mix
½ cup coarsely chopped cilantro
¼ cup olive oil
3 tablespoons lime juice
2 tablespoons ground cumin
1 tablespoon cayenne pepper
1 tablespoon garlic powder
1 teaspoon salt
freshly ground black pepper to taste
¼ cup sliced almonds, or to taste

Steps:

  • Combine coleslaw mix and cilantro in a serving bowl.
  • Whisk olive oil, lime juice, cumin, cayenne pepper, garlic powder, salt, and black pepper together in a separate bowl until the oil emulsifies; pour over the coleslaw mixture.
  • Cover the bowl with plastic wrap and refrigerate 1 to 2 hours. Garnish with sliced almonds to serve.
