- Place the egg, lime juice, mustard, sea salt and garlic in your blender (I use a Vitamix), and puree until well combined. Keep the blender on, and slowly add in the olive oil in one steady stream until mixture emulsifies and becomes rich and creamy. Add in the cilantro until well combined. Then add in more lime juice or salt to achieve the desired taste.
