Chorizos con Frijoles image

Argentine style black bean side dish (serves 4). Can also be a main dish for two if served with some rice.

3 ounce(s) spanish chorizo, diced
1 can(s) black beans, rinsed and drained (15 ounce)
1 tablespoon(s) olive oil
1/3 cup(s) chopped onion
1 teaspoon(s) minced garlic
1/3 cup(s) diced fresh mild wax peppers, marconi peppers or other mild sweet garden peppers
1 tablespoon(s) tomato paste
1 tablespoon(s) balsamic vinegar
1/2 teaspoon(s) dried basil
- salt and black pepper to taste
1 large fresh tomato, diced
1/2 cup(s) water
1 tablespoon(s) chopped fresh cilantro

Steps:

  • Brown the sausage with the onion, garlic and diced peppers in olive oil.
  • Stir in the beans, tomato paste, balsamic vinegar, basil, salt, pepper, tomato and water.
  • Simmer for a few minutes until tomatoes soften a little and the beans thicken up. Stir in the cilantro.
