Chorizo and Macaroni with Feta and Tomatoes? image

based on tiktok feta tomato pasta,i created this delicious recipe with chorizo and macaroni,it good with roast chicken

1 Tbsp avocado oil
9 oz soft mexican chorizo,casing removed and crumbled
1 large vidalia sweet onion,peeled and sliced
1 (16 ounce) package elbow macaroni
2 c shredded parmesan cheese,divided
1 tsp dried basil
2 tsp garlic pepper
2 pt cherry tomatoes
1 Tbsp sea salt/black pepper
1 (8 ounces) block feta cheese

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Heat avocado oil in a large,deep skillet over medium heat.Add crumbled chorizo,saute for 5 minutes until crisp.reduce low heat,stir in sliced vidalia onion.
  • 3. Remove from heat,reserved chorizo grease in 3/4 cup and set aside.
  • 4. Fill a large pot with lightly salted water and bring to a boil.Stir in macaroni and return to a boil.
  • 5. Cook and uncovered,stirring occasionally,about 8 minutes;drain.Transfer to a large bowl,add 1 cup shredded parmesan cheese,dried basil and garlic pepper;mix well.
  • 6. Place cherry tomatoes,sea salt/black pepper and chorizo grease in a 8-inch casserole dish.Add block of feta cheese in the center of tomato mixture.
  • 7. Bake in the preheated oven for 35 minutes.
  • 8. Remove from the oven.Cool completely.Mash it with a fork for 40 seconds.Add crumbled chorizo and macaroni mixture;mix well until combined.Sprinkle with remaining parmesan cheese.
