Colcannon (Irish: cál ceannann, meaning "white-headed cabbage") is a traditional Irish dish mainly consisting of mashed potatoes with kale or cabbage. Good with any broiled or barbecued meat or with crisp roast chicken.

Steps:
- Cook potatoes until tender; drain well. Heat milk and onions until onions are soft; add to potatoes and beat with mixer until fluffy. Blend in cabbage, 1 tablespoon butter, parsley, salt, pepper and mace. Beat until potatoes and cabbage are fluffy. Pile into warm deep dish; make well in center and pour in remaining 3 tablespoons butter.
