Chocolate Muffin tops image

To freeze these, wrap muffin tops in foil, or place in freezer bags; label and freeze. To reheat, microwave at 100%-high about 30 seconds per muffin top. These are so good - I have one for banana muffin tops too!

1 1/2 c quick or old fashioned oatmeal, uncooked
1/2 c granulated sugar
1/3 c margarine or butter, melted-divided
1 1/3 c all purpose flour
1 Tbsp baking powder
1/4 c cocoa powder
2/3 c milk
1 tsp vanilla extract
1 large egg, lightly beaten
1/2 c mini chocolate chips
1/2 c chopped walnuts

Steps:

  • 1. Heat oven to 400^. Lightly grease a large cookie sheet. Set aside. Combine oats and sugar in a large bowl; mix up good. For streusel topping: Combine 1/4 cup oat mixture and 1 Tablespoon melted margarine in small bowl set aside. For Muffins: Add flour,baking powder and cocoa to remaining oat mixture; mix well. Combine milk,vanilla, remaining melted margarine and egg in a small bowl; mixing well. Add to dry ingredients; mix just until dry ingredients are moistened. Stir in nuts and chips. For each muffin top, drop batter by 1/4 cupfuls onto prepared cookie sheet. (use small cookie scoop). Sprinkle streusel topping evenly over batter, patting gently on. Bake 20-22 minutes, or until golden brown. Serve warm.
