Chocolate Mayonnaise Cake image

Very good and moist. It has a nice light chocolate taste and the frosting is just perfect for the topping. Don't let the mayonnaise fool ya. My mom made this one time and I was hooked, so I now make it.

2 c all purpose flour
1 c sugar
3 Tbsp baking cocoa
2 tsp baking soda
1 c water
1 c mayonnaise
1 tsp vanilla extract
1/4 c butter or margarine
1/2 c brown sugar, firmly packed
2 Tbsp milk
1 3/4 c sifted confectioners sugar

Steps:

  • 1. In a large bowl, combine flour, sugar, cocoa and baking soda (you may want to use less baking soda about 1 1/2 tsp.) Add water, mayonnaise and vanilla: beat at medium speed until thoroughly combined.
  • 2. Pour into greased 9" square or 11"x7"x2" baking pan. Bake at 350 degrees F for 30-35 minutes or until cake tests done. Cool completely.
  • 3. FOR FROSTING: Melt butter in a saucepan. Stir in brown sugar; cook and stir until bubbly.
  • 4. Remove from the heat and stir in milk. Gradually add confectioners sugar; beat by hand until frosting is of spreading consistency. Immediately frost cake.
