Chocolate Chip Streusel Cake image

Brown bags and lunch boxes just found a tasty new treat. Here's a cake that's made with wholesome whole wheat flour.

1 cup Gold Medal™ whole wheat flour
1/2 cup Gold Medal™ all-purpose flour
3/4 cup granulated sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup cold butter or margarine, cut into pieces
2/3 cup buttermilk
1 teaspoon vanilla
1 egg
1/2 cup miniature semisweet chocolate chips
1/3 cup Gold Medal™ whole wheat flour
1/3 cup packed brown sugar
1/4 cup cold butter or margarine
1/4 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Grease bottom only of 8-inch square pan with shortening or cooking spray.
  • In large bowl, mix 1 cup whole wheat flour, the all-purpose flour, granulated sugar, baking powder, salt and baking soda. Cut in butter, using pastry blender or fork, until mixture is crumbly. Add buttermilk, vanilla and egg; stir until well blended. Stir in chocolate chips. Spread in pan.
  • In small bowl, mix streusel ingredients with fork until mixture is crumbly. Sprinkle over batter.
  • Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Serve warm or cool.
