Chocolate Chip Oatmeal Cookies image

Growing up I never liked oatmeal cookies because they had raisins. But when I found this recipe under the lid of the Quaker Oats Box, I thought I'd substitute the raisins with chocolate and see if I liked it. And I LOVE THEM!

2 stick butter (1/2 lb.), softened
1 c brown sugar
1/2 c sugar
2 eggs
1 tsp vanilla
1-1/2 c all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 c oats (old fashioned or instant)
1 c chocolate chips (you may feel the need to add more. go for it!)

Steps:

  • 1. Beat together butter & sugars, until creamy. Then once creamy beat for another minute on med-high speed.
  • 2. Add eggs & vanilla. Beat until well incorporated.
  • 3. In a separate bowl combine flour, baking soda, cinnamon, and salt; mix together very well. Then add the flour mixture to the butter & sugar mixture. Beat slowly until well incorporated. DO NOT OVER-BEAT (meaning once it is fully incorporated, stop the machine and move to next step)
  • 4. Stir in oats and chocolate chips. Beat slowly until incorporated.
  • 5. Drop by rounded Tablespoons onto un-greased cookie sheet. And bake for 9-12 minutes. Longer for crispier cookies, less time for softer cookies. (I prefer the softer ones)
  • 6. Once the cookies are done, let them sit on the cookie sheet for at least one minute and then move to a cooling rack. Enjoy!!
