Steps:
- Stir together sugar, cocoa, cornmeal, flour, vinegar, melted butter, and salt until well combined. Add eggs, stirring well.
- Spoon about 1 heaping teaspoon of chocolate mixture into each mini phyllo shell and place on an ungreased baking sheet.
- Bake at 350 degrees for 20-25 minutes, or until just set. Cool completely.
- Store tartlets in an airtight container for up to 3 days.
- {Optional} When ready to serve, top with a small dot of whipped cream or pipe tops with a bit of almond cream cheese topping.
- Place cream cheese in a small mixing bowl; cream with a fork.
- Add confectioners' sugar and almond extract; mix until well combined and smooth. Fold in Cool Whip.
- Pipe onto Chocolate Chess Pie Tartlets.
