Steps:
- 1. Sift flour, cocoa, and confectioner sugar together 3 times.
- 2. Beat egg whites, cream of tartar, salt, and vanilla with a wire whip until foamy. Gradually add 2 Tbsp of granulated sugar until incorporated.
- 3. Continue beating until meringue holds stiff peaks.
- 4. Gradually fold in flour, cocoa, and sugar mixture until mixture disappears.
- 5. Push into ungreased tube center pan. Gently cut through batter with knife.
- 6. Bake at 375 for 30-35 mins. When cracks are dry remove for oven. Let hang until cold.
