CHOCOLATE ALMOND RUM BALLS image

6 ounces Andes mint chocolate
1 c. sugar
3 Tblspoons light corn syrup
1/2 c. Myer's Dark rum
2 1/2 c. finely crushed chocolate wafers (like vanilla wafers)
1 c. finely chopped almonds

Steps:

  • Melt chocolate in top of a double boiler over simmering water until melted. Remove from over water. Whisk in 1/2 c. sugar and corn syrup, then rum. Mix chocolate wafers and almonds in medium bowl to blend; add chocolate mixture and stir to blend. Place remaining 1/2 c. sugar in shallow bowl. To make rum balls- roll chocolate mixture into generous 1-inch balls. Roll balls in sugar to coat evenly. Cover and refrigerate at least overnight and up to 5 days.
