CHIVE MASHED POTATOES image

Number Of Ingredients 6

5 lbs Yukon Gold potatoes
2 tsp kosher salt
1 c milk
1/2 c sour cream
6 tbs unsalted butter
1/2 c chopped fresh chives

Steps:

  • Peel and quarter potatoes. Cover potatoes with cold water by 1 inch in a 5 quart heavy pot and bring to a boil. Add salt and simmer potatoes, uncovered, until very tender, about 20 min. Reserve 1 cup of the potato cooking water, then drain potatoes in a colander. Return potatoes to pot with 1/2 cup reserved cooking water, milk, sour cream, butter and chives and mash with a potato masher until almost smooth, adding more of the reserved cooking water if necessary. Season with salt and pepper and serve.
