CHIPOTLE TURKEY CHILI image

Number Of Ingredients 17

1 Tbls olive oil
3 medium onions, diced
2 medium carrots, chopped
2 cloves garlic, minced
4 cups low-sodium chicken broth
2 cups cooked turkey meat, shredded or diced
1 can (15 oz) kidney beans, drained
1 can (14 oz) diced tomatoes with juices
1/2 cup corn kernels, fresh or frozen
2 Tbls chili powder
1 Tbls plus 1 teas brown sugar
2 teas ground cumin
2 teas pureed chipotle in adobo sauce (or more)
1 teas dried oregano
1/2 teas coarse salt
light sour cream
tortilla chips

Steps:

  • 1. Heat oil in large pot over medium-high heat. Add onions, carrots and garlic. Cook, stirring often, until onion softens, about 5 minutes. 2. Add tomato paste, and stir. Add stock, turkey, beans, tomatoes, corn, chili powder, brown sugar, cumin, chipotle, oregano and salt. Bring to boil, reduce heat to simmer, cook covered, stirring often, 30 minutes. Add additional chipotle and salt if needed. Serve with sour cream and tortilla chips
