Chipotle Tofu Soup image

Simple, tasty, and healthy tofu soup. Great with a nice hunk of artisan bread!

1 large onion, diced
2 cloves garlic, minced
1 (28 ounce) can diced tomatoes with juice
2 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can black beans
1 (12 ounce) package firm tofu, cut into 1/2-inch cubes
1 cup sliced bok choy
1 tablespoon chipotle peppers in adobo sauce, chopped
1 teaspoon adobo sauce from chipotle peppers
½ teaspoon paprika
½ teaspoon dried oregano
salt to taste
½ lime, juiced
¼ cup chopped fresh cilantro, or more to taste

Steps:

  • Heat a saucepan over medium heat and add onion. Cook and stir until translucent, about 5 minutes. Add garlic; cook until fragrant, about 1 minute. Add diced tomatoes, broth, beans, tofu, bok choy, chipotle peppers, adobo sauce. paprika, oregano, and salt. Bring to a boil. Reduce heat and simmer until heated through and slightly thickened, about 30 minutes. Pour into bowls and add lime juice and cilantro.
