Chinese Spinach Salad image

Adapted this recipe from one for cooked spinach that was in our local paper years ago. The dressing is easily doubled. Water chestnuts are a bit bland. To give them a flavor boost, I marinate them in a little of the dressing for 15 - 20 minutes.

Number Of Ingredients 11

fresh spinach leaves
mushrooms, sliced thin
onion, sliced thin
tomato, diced
toasted slivered almonds
1/2 c water chestnuts, sliced (i like them slivered)
DRESSING
4 Tbsp vegetable oil
1-2 tsp sugar
4 Tbsp soy sauce or tamari
4 Tbsp onion, small diced

Steps:

  • 1. Place ingredients for the dressing in a microwave safe, one cup measure. Heat in the microwave 20 - 30 seconds; just until warm. Whisk together.
  • 2. Place water chestnuts in a small bowl. Drizzle on enough dressing to coat. Let stand 15 - 20 minutes
  • 3. Divide spinach, mushrooms, onion slices, and tomato between 2 salad plates. Add water chestnuts. Whisk dressing, drizzle over salad and garnish with toasted slivered almonds.
