1 lb. cucumbers
1 tsp. salt
4 tsp. sugar
3 tbl. dark sesame oil
1 tbl. soy sauce
2 tsp. rice vinegar
1/2 tsp. minced garlic
1 tsp. chili oil (optional)

Steps:

  • 1) Peel and seed cucumber, cut into 2-inch lengths. Mix with salt and 1 tsp. sugar, set aside for 10 min. Whisk remaining ingredients. 2) Rinse, drain, and pat cucumber dry, then toss with dressing. Let stand in fridge for 3 hours - 1 day.
