Number Of Ingredients 4

3 eggs
1/2 c confectioners' sugar
1/2 c flour
1 1/8 tsp lemon extract

Steps:

  • 1. Beat eggs with electric beater for 2 minutes;
  • 2. Add sugar gradually, beating for 10 minutes.
  • 3. Fold in flour and lemon extract; beat for 2 minutes.
  • 4. Heat griddle to medium.
  • 5. Drop batter onto griddle by tablespoonfuls;
  • 6. allow to spread to about 3 inches in diameter.
  • 7. Cook for 30 seconds on each side or until cakes become golden brown.
  • 8. Remove from griddle.
  • 9. Place fortune paper in center while still hot and pliable;
