CHILLED CUCUMBER PINEAPPLE SOUP image

Number Of Ingredients 8

2 1/2 cups cubed (1 inch) fresh pineapple
1 seedless cucumber (3/4lb usually plastic wrapped) peeled, cored, and chopped
1 green bell pepper, chopped
1/4 cup water
1/4 cup heavy cream
1 teaspoon worchestershire sauce
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • blend pineapple, cucumber, bell pepper, and water in a food processor until thick and smooth, about 1 minute. Add cream, worchestershire sauce, salt, and pepper and pulse until combined. Pour through a fine-mesh sieve into a bowl, pressing hard on solids, and chill, covered, until cold 30 minutes to 1 hour.
