3 c cooked white or brown rice
1 can(s) (16-ozs) kidney beans, rinsed and drained
1 medium onion, chopped
1 can(s) (4-ozs) chopped green chilies
2 clove garlic, minced
2 tsp chili powder
2 tsp ground cumin
1 tsp dried oregano
1 tsp creole seasoning
1/2 tsp salt
2 c shredded sharp cheddar cheese, divided

Steps:

  • 1. In a greased 2 quart baking dish, combine all ingredients except cheese.
  • 2. Top with 1-1/2 cups of cheese. Cover and bake at 350 degrees for 25 minutes.
  • 3. Sprinkle with remaining cheese. Bake, uncovered, 10 minutes longer.
