Steps:
- Preheat ove to 375. Place chicken between 2 sheets of waxed paper. Pound to 1/2 inch thickness. Sprinkle with salt and pepper and set aside. Place flour beaten egg, and bread crumbs into 3 seperate shallow dishes. Dredge chicken in flour, shaking off excess, then in egg and then in crumbs, pressing firmly to coat. In a large skillet, heat olive oil over medium high heat. Add chicken and cook until golden, 3-4 min per side. Remove from skillet and transfer to large baking dish. Add mushrooms to same skillet and cook 30 seconds. Add Marinara sauce an parsley. Cook 3 mins stirring freq. Place zucchini slices in shallow microwave safe dish. Sprinke with 1 tablespoon water. Cover and microwave on high 2 min. Remove and drain. Place 2 of the zucchini slices on each chicken breast forming an "X". Pour Marinara mixture evenly over zucchini and sprinkle with Mozz. Bake 10-15 in or until cheese is melted.
