Chicken Yucatan image

Number Of Ingredients 12

3 tablespoon Orange Juice
3 tablespoon Canned Unsweetened Pineapple Juice
2 tablespoon Lime Juice
2 tablespoon Fresh Oregano, chopped (or 2 t dried)
1 tablespoon Olive oil
1 teaspoon Ground Cumin
1 teaspoon Chili powder
1 clove Garlic, fine chop
1/2 teaspoon salt
6 dash Tabasco
6 pieces Bone-in Chicken Thighs (2 1/2 lb.), skin and fat removed
1 recipe black pepper

Steps:

  • In food processor or blender, combine first 10.
  • Set thighs in 8 x 11.5" baking dish and brush with half the mixture. Roast, turning once and brushing with mixture from time to time, 30-35 min. Salt and pepper. Serve hot or cold.
