Chicken with Sun-Dried Tomatoes image

Yum! This our kind of easy weeknight dinner recipe. The white wine adds some acidity to the recipe. The sun-dried tomatoes are a bit tart and a burst of flavor. It's an easy dinner to impress guests. If you're looking to lower carbs, it would be delicious served over cauliflower rice too.

2 lb boneless skinless chicken breast cut in bite size pieces
1 Tbsp olive oil
2 c chopped sun-dried tomatoes in olive oil
1 lb button mushrooms
3 c white wine (can substitute chicken broth)
2 clove garlic
1 small onion
1 Tbsp oregano, dried
salt and pepper

Steps:

  • 1. Heat the oil in a large fryer pan, add the onion and cook until translucent.
  • 2. Add garlic and chicken. Cook until brown.
  • 3. Add the wine and bring to a slight boil.
  • 4. Add the mushroom, sun-dried tomatoes, oregano, salt and pepper. Cook until the wine reduces to half.
