Yum! This our kind of easy weeknight dinner recipe. The white wine adds some acidity to the recipe. The sun-dried tomatoes are a bit tart and a burst of flavor. It's an easy dinner to impress guests. If you're looking to lower carbs, it would be delicious served over cauliflower rice too.

Steps:
- 1. Heat the oil in a large fryer pan, add the onion and cook until translucent.
- 2. Add garlic and chicken. Cook until brown.
- 3. Add the wine and bring to a slight boil.
- 4. Add the mushroom, sun-dried tomatoes, oregano, salt and pepper. Cook until the wine reduces to half.
