Steps:
- 1. Heat the olive oil in a large pan over medium heat. Add the garlic and saute until lightly browned, about 3-4 minutes. 2. Raise the heat to medium-high. Add the chicken wings and saute until browned on all sides, about 5 minutes. Work in batches if you have to so pan does not crowd. 3. When chicken is browned, put all wings in the pan. Add the thyme, bay leaf and sherry. Stir the mixture well so the oil and sherry emulsify, and simmer for 1 minute. Add the stock and cook for 1 more minute. Season and serve.
