CHICKEN WITH BLACK BEANS AND RICE image

Number Of Ingredients 13

1/4c all-p flour
1-1/2tsp chili powder
1/4 tsp salt
1/4 tsp black pepper
2-1/2 to 3 lbs chicken thighs
2 tbsp oil
1 15 oz can black beans
1 14.5 oz diced tomatoes with onion and pepper
1c tomato juice
1c frozen corn
2/3c long grain rice
1/8 to 1/4 tsp cayenne pepper
2 cloves garlic, minced

Steps:

  • 1. In large resealable plastic bag combine flour, 1 tsp chili powder, salt, pepper. Add half the chicken, toss, repeat till all is coated. 2. Inn a very large skillet, brown chicken on all sides in hot oil over medium heat about 10 minutes, turning occasionally. Remove chicken, set aside. Drain fat from pan. Add beans, undrained tomatoes, juice, corn, uncooked rice, remaining chili powder, cayenne pepper, garlic. Bring to boil. Transfer mixture to baking dish (3 qt) top with chicken. 3. Bake, covered in 375 degree oven for 45-50 minutes, till chicken is cooked through and rice is tender.
