Chicken Stir-Fry So Easy image

You are just going to love this recipe- so quick and easy! It's savory and quick to put on the table, because it uses rotisserie chicken and whatever veggies you have on hand.

2 tablespoon(s) cornstarch
1 3/4 cup(s) chicken broth or chicken stock
1 tablespoon(s) soy sauce
1/2 teaspoon(s) ground ginger
1 cup(s) fresh broccoli florets,
1/2 cup(s) fresh sliced carrots
1/2 cup(s) sliced celery
1/2 cup(s) green onion
1/2 cup(s) red or green bell peppers cut in strips
3/4 cup(s) pineapple chunks with juice,optional
2 cup(s) rotisserie chicken breast,chopped up
3 cup(s) cooked regular long-grain white rice (1 c. uncooked)

Steps:

  • Stir the cornstarch, 1 cup broth, soy sauce and ginger in a small bowl until the mixture is smooth.
  • Heat the vegetables and remaining 3/4 cup broth in a 10-inch nonstick skillet over medium-high heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the vegetables are tender-crisp. Add in pineapple and juice.
  • Stir the cornstarch mixture in the skillet. Cook and stir until the mixture boils and thickens. Stir in the chicken and cook until the mixture is hot and bubbling. Serve over hot rice.
