Chicken Ranch Casserole, Sandy's image

Sandy said this was an amazing recipe, so of course I had to have it. It is like the ranch potatoes I make, but with the addition of chicken. Oh, snap, yum!

Number Of Ingredients 9

32 ounce(s) frozen potato tots
1 1/2 cup(s) shredded cheddar
1 1/2 cup(s) colby jack cheese
2.8 ounce(s) real bacon pieces
1/4 teaspoon(s) salt
1/4 teaspoon(s) black pepper
4 boneless skinless chicken breasts
3/4 cup(s) milk
1 ounce(s) package ranch dressing mix

Steps:

  • Coat bottom of slow cooker with PAM. Place half potato tots on bottom. In med bowl combine the cheeses, mix well. Sprinkle half the cheese mixture over the potato tots. Sprinkle half the bacon pieces over the cheese. In shallow dish, combine ranch dressing mix, salt and pepper. Coat chicken in ranch mixture and place over bacon pieces. Sprinkle with remaining ranch mixture. Top with remaining potato tots, cheese mixture, and bacon. Pour milk over the top. Cover and cook on low 4-4 1/2 hours or until chicken in no longer pink in the center.
  • Tip: Every time you open a slow cooker, it will take an additional 30 min to recoup the heat that you lost. NO LIFTING THE LID!!!
