CHICKEN PARMESAN WITH ROTINI image

3 cups rotini pasta
10 crushed Ritz crackers
3 Tb Parmesan
1 tsp dried oregano
1 egg white
4 chicken breast halves
2 cups tomato-basil spaghetti sauce, divided
1 cup shredded Mozzarella

Steps:

  • Cook pasta as directed. Meanwhile, combine cracker crumbs, Parmesan, and oregano in a pie plate. Lightly beat the egg white in another pie plate. Dip chicken in egg whie, then roll in crumb mixture until evenly coated. Spray a large nonstick skillet with cooking spray and set on medium heat. Add chicken and cook on each side until cooked through. Spoon 1 cup of spaghetti sauce over chicken and top with cheese. Cover skillet with a lid and reduce heat to low. Simmer 3 minutes, or until cheese is melted. Drain cooked pasta and return to pan. Add remaining spaghetti sauce and toss to coat. Cook on medium heat until heated through, stirring occasionally. Spoon onto serving plates and top with the chicken.
