Chicken Livers Provencal image

My mom has always enjoyed chicken livers....I need a little help to be able to eat them. This elevates them a bit and makes them look pretty!

Number Of Ingredients 9

1 lb chicken livers
2 tsp butter, melted
2 tsp vegetable oil
2 Tbsp shallots or green onions, minced
1 large tomato, peeled, seeded and chopped
1/2 tsp garlic, minced
1/2 tsp salt
1/8 tsp black pepper
1/4 c fresh parsley, chopped

Steps:

  • 1. Saute livers in butter and oil in a medium skillet 8 to 10 minutes or until livers are tender.
  • 2. Add shallots and cook 1 minute, stirring constantly. Add the tomato and the next 3 ingredients; cook 2 minutes, stirring constantly.
  • 3. Remove from heat and stir in the parsley.
