CHICKEN LEMONGRASS SOUP image

3 Q. Chicken broth/stock
1 pkg. Small noodles or rice
Carrots (sliced)
Celery (diced)
1 pkg. Mushrooms
Green onions
3-5 chicken bouillon cubes (to taste)
2/3 cup lemon juice
1 egg
1 lb. Boneless skinless chicken breasts

Steps:

  • Heat chicken broth in large pot Boil chicken breast in water/lemon juice Add carrots & celery to broth Shred chicken Bring to boil Beat 1 egg & 2/3 cup lemon juice together; SLOWLY pour in while stirring Add bouillon cubes to taste Add noodles; cook until done & serve
