CHICKEN IN HOISIN SAUCE image

4T oil for searing chicken
1 Fresh chicken 3-4 lbs: rinsed and pat dried
2 t finely minced fresh ginger root
2 T minced garlic
Sauce Mixture
6T Hoisin Sauce
1 t salt
1 T sugar
2 T black soy sauce
1 T pale dry sherry
1 T oyster flavored sauce
1/2 c boiling water
1 t sesame seed oil

Steps:

  • Heat wok over high heat until very hot. Swirl in oil for searing. Sear chicken evenly until shiny yellow. Remove chicken from wok. Keep oil hot. Slightly brown ginger and garlic. Stir in the sauce mixture. When sauce begins to boil return Chicken to wok and roll it around to coat the entire chicken with sauce. . Pour in water. Cover and simmer over low hear for 20 minutes wing side down in wok Turn chicken and simmer another 20 minutes on the other wing. May need additional 20 minutes on the chicken back. Check at leg joint. Place chicken on a chopping board and brush it with the sesame oil. Serve hot.
