Chicken Fingers with a Side image

This was our Saturday meal. I used only two large chicken breasts and it was more than enough for two adults. The veggies were already in the fridge. Enjoy!

Number Of Ingredients 10

6 - boneless chicken skinless chicken breast
1 - egg, slightly beaten
1 cup(s) buttermilk
1 1/2 teaspoon(s) garlic powder
1 cup(s) all purpose flour
1 cup(s) seasoned bread crumbs or panko
1 teaspoon(s) salt
1 teaspoon(s) baking powder
- oil for frying
- basket mushroom, med onion, green and yellow peppers, sir fry

Steps:

  • cut the chicken into 1/2 inch strips; in a large resealable plastic bag, combine the egg, buttermilk and garlic powder; add chicken. Seal bag and turn to coat; refrigerate for 2 to 4 hours.
  • drain and discard marinade. In another large resealable plastic bag; combine the flour, bread crumbs, salt and baking powder; add chicken. Seal bag and toss to coat.
  • In an electric skillet, heat oil to 375, or any nice frying skillet or fry daddy. Fry the chicken in batches for 4-5 minutes or until golden brown on both sides. Drain on paper towels.
  • In separate skillet using a little butter, stir fry the mushroom, onion and peppers with a little seasoning. Serve with chicken
