Chicken Fajitas, Millie's image

Member's Choice! Quick and easy ... these chicken fajitas are perfect for a busy day. I loved the combination of seasonings. It's not too spicy, but if you wanted to add some heat chop up jalapenos or top with a spicy salsa. A super simple weeknight meal.

4 chicken breasts, boneless and skinless
1 large bell pepper, sliced (or 2 small ones of different colors)
1 large onion, halved and sliced
1 tomato, diced
1 tsp red fajita seasoning
1 tsp Adobo seasoning
1-2 Tbsp cooking oil

Steps:

  • 1. Cut chicken breast into thin 2 inch long strips and add 1/2 tsp fajita seasoning and 1/2 tsp Adobo seasoning. Mix well and then set aside. Wash hands.
  • 2. On a different cutting board (I have one that is for meat only and another for veggies), slice onion, bell pepper, and dice tomato.
  • 3. Heat large skillet on high heat then add oil and chicken. Sautee chicken till cooked through.
  • 4. Add sliced peppers and onions and cook for 3-4 minutes.
  • 5. Add diced tomato and 1/2 tsp fajita seasoning and 1/2 tsp Adobo seasoning. Cook till peppers and onions are tender (2-3 minutes).
  • 6. Serve with warm flour tortillas.
