Chicken Enchilada soup (quick) image

If you have ever tried Chili's Chicken Enchilada Soup, let me just say LUCKY YOU! It is fabulous! I created my own version. It's a pretty close imitation and only took about 15 minutes, start to finish!

Number Of Ingredients 10

2 can(s) campbells' cream of chicken soup
2 can(s) campbell's fiesta nacho cheese soup
1-2 can(s) water
2 tsp chili powder
1/2 tsp onion powder
1 tsp ground cumin
1/4 tsp garlic powder
1-12 oz can(s) chunk white chicken
1 c grated cheddar cheese
1 c crispy tri-color tortilla strips

Steps:

  • 1. Open all 4 cans of soup and combine in a large pot. Add water to the consistency that you like. Heat over medium heat.
  • 2. Add all the seasonings and stir to mix well. Stir in the chicken. Heat thoroughly.
  • 3. Ladle into bowls. Sprinkle grated cheese and tortilla strips on top and serve hot.
