If you have ever tried Chili's Chicken Enchilada Soup, let me just say LUCKY YOU! It is fabulous! I created my own version. It's a pretty close imitation and only took about 15 minutes, start to finish!

Steps:
- 1. Open all 4 cans of soup and combine in a large pot. Add water to the consistency that you like. Heat over medium heat.
- 2. Add all the seasonings and stir to mix well. Stir in the chicken. Heat thoroughly.
- 3. Ladle into bowls. Sprinkle grated cheese and tortilla strips on top and serve hot.
