Chicken Cordon Bleu image

This is one of my favorite recipes to serve at dinner parties. The addition of the dry sherry really gives the sauce a wonderfully delicious flavor so please don't omit it. : ) And, don't forget to remove the toothpicks before serving to your guests. : )

4 - whole chicken breasts, boneless & skinless
8 slice(s) cooked ham
8 slice(s) swiss cheese
3 tablespoon(s) parsley, minced
- freshly ground black pepper
1 - egg, beaten
1/2 cup(s) italian seasoned breadcrumbs
1/4 cup(s) butter
1 can(s) cheddar cheese soup (10 3/4 oz)
8 ounce(s) sour cream
1/3 cup(s) dry sherry

Steps:

  • Split chicken breasts in half lengthwise. Place each piece between a folded sheet of waxed paper. Using a meat mallet, flatten to 1/4 inch thick.
  • Place 1 slice each of ham and cheese in the center of each piece of chicken breast. Roll up each chicken breast lengthwise and secure with a wooden toothpick.
  • Dip each roll into beaten egg and coat well with bread crumbs. In a heavy skillet, melt the butter and brown the chicken rolls. Place chicken in a 12 x 8 inch baking dish, reserving the drippings.
  • To the drippings, add the cheese soup, sour cream and sherry. Stir well and pour over the chicken. Bake uncovered in a 350 degree oven for 40 to 45 minutes.
