Chicken Carbonara image

4 - 6 slice thick cut bacon
3 Tbsp minced onion
3 clove minced garlic
1 c heavy cream
8 oz spaghetti or fettucini
1/4 c grated parmesan cheese
2 Tbsp parsley flakes
1/4 tsp ground pepper
2 boneless, skinless chicken breasts

Steps:

  • 1. Preheat oven to 350 degrees. Bake Chicken Breasts for 30 minutes, dice. Cook Spaghetti as directed.
  • 2. In a large skillet over medium heat, cook bacon about 3 minutes or until limp. Add onion; cook 3-5 minutes longer or until bacon is browned, stirred occasionally. Add garlic, cook 30 seconds. Drain all but leave 1 Tbsp of bacon fat from skillet. Stir in cream; bring just to boiling point. Reduce heat to low and simmer 3 minutes. Keep warm.
  • 3. Add cooked pasta, Chicken Breasts, Parmesan cheese, pepper and parsley to cream mixture. Toss to coat pasta well.
