Chicken Caesar Tortellini With Toasted Almonds image

A nice summer salad using up "its and bits" from the fridge. Serve with a baguette and seasonal vegetables.

Number Of Ingredients 7

250 g cheese tortellini (fresh or frozen)
1/2 cup caesar salad dressing (creamy, preferably homemade or ranch dressing)
1/4 teaspoon black pepper, fresh
1/4 cup fresh basil, chopped
2 cups cooked chicken
1/4 cup slivered almonds, toasted
1/4 cup parmesan cheese, grated

Steps:

  • Cook tortellini in salted water. Rinse tortellini under cold running water until cool; drain.
  • Stir dressing with black pepper and basil. Add tortellini -- avoid breaking up the pasta. Salad can be covered and refrigerated for up to a day.
  • When ready to serve, gently fold in chicken and nuts. Sprinkle Parmesan over top.
