CHICKEN AND BLACK BEAN QUESADILLA image

Number Of Ingredients 6

1 15 oz can of black beans (drained and rinsed)
¾ cup Monterey Jack or Pepper Jack Cheese
1 cup salsa divided
1 cup cube or shredded cooked chicken
4 10" or 12" flour tortillas
cooking spray

Steps:

  • 1. Combine beans, chicken, cheese and ½ cup salsa in bowl and stir 2. Heat a large non-stick skillet and spray with cooking spray 3. Place about ¾ cup of the bean and chicken mixture on half of the tortilla and fold over (repeat with other three) 4. Add 2 quesadillas to pan and spray tops of quesadillas 5. Cook bottom until crisp 6. Flip and repeat on other side 7. Serve with dressings of your choice (lettuce, tomato, sour cream, guacamole)
