CHICKEN ALFREDO FETTUCCINE image

1.5 lbs chicken breast cut up
8 Tablespoons butter
6 cloves garlic minced
1 tablespoon Italian or Greek seasoning
3 tablespoons fresh basil
1 onion chopped
1 lbs mushrooms
1/3 cup flour
1 teaspoon salt
1/2 teaspoon pepper
2 cups half and half
1 cup heavy cream and 1 cup milk or 2 cups milk (any kind)
3/4 cup Parmesan grated
1 cup yellow and white cheese blend
1-2 large tomatoes chopped
1 cup sour cream
1 head fresh broccoli broken up small (optional)

Steps:

  • Directions In a skillet melt 6 tablespoons butter, add chicken, garlic, and seasonings. Cook until chicken is done. Spoon into a dish and set aside. In the same pan add onions, and mushroom, cook until soft. Add the last 2 tablespoons of butter. Stir in the flour and cook for 2-3 minutes. Add the milk products and stir until smooth. Stir in the cheeses. Add the chicken mixture back in along the the tomatoes, sour cream, and broccoli. Cook fettuccine or other pasta you like and blend it into the sauce. You can make this ahead of time for a group and pour it into a large baking pan. Cover and refrigerate. To reheat, turn oven on to 450 and cook covered for 45 minutes to an hour.
