Chicken a l'Orange image

You can also use boneless-skinless chicken pieces in this, but the chicken will not be as moist.

1 - broiler-fryer chicken, cut up
2 tablespoon(s) butter, melted
1 teaspoon(s) salt
1/8 teaspoon(s) ground ginger
1/8 teaspoon(s) pepper
3 large carrots, scraped and cut into julienne strips
1 small onion, thinly sliced and separated into rings
2/3 cup(s) orange juice
1 tablespoon(s) cornstarch
1/3 cup(s) orange marmalade
3 tablespoon(s) brown sugar
1 tablespoon(s) lemon juice

Steps:

  • Brown the chicken pieces in melted butter in a large skillet over medium heat.
  • Combine the salt, ginger, and pepper in a small bowl; stir well, and sprinkle over the chicken. Add the carrot strips and onion rings to the chicken.
  • Combine the orange juice and cornstarch in a medium bowl, stirring well. Add the orange marmalade, brown sugar, and lemon juice to the orange juice mixture; stir well.
  • Pour the orange juice mixture over chicken and vegetables. Bring to a boil; cover, reduce heat, and simmer for 45 to 50 minutes or until the chicken is done.
