Chewy Apple Moons image

Number Of Ingredients 10

3/4 cup(s) frozen unsweetened apple juice concentrate
1/2 cup(s) coarsely chopped dried apples
2 - eggs
1/4 cup(s) butter, melted and cooled
1 teaspoon(s) vanilla
1 1/4 cup(s) all purpose flour
1/2 teaspoon(s) baking powder
1/2 teaspoon(s) ground cinammon
1/4 teaspoon(s) salt
1/8 teaspoon(s) ground nutmeg

Steps:

  • Preheat oven to 350. Lightly grease or line cookie sheets with parchment paper. Combine apple juice concentrate and apples in small bowl; let stand 10 minutes. Beat eggs in medium bowl. Beat in concentrate mixture, butter, and vanilla. Add flour, baking powder, cinnamon, salt, and nutmeg; mix well.
  • Drop dough by tablespoonfuls 2 inches apart onto prepared cookie sheets. Bake 12 minutes or until lightly browned. Cool on cookie sheets 2 minutes. Remove to wire racks; cool completely.
