Cherry Vanilla Bars image

You could use whatever dried fruit you prefer: Blueberries, cranberries, a mix... Got the idea from my Land O'Lakes baking book. Followed the original recipe quite closely.

Number Of Ingredients 13

1/2 cup(s) sugar
1/3 cup(s) butter, softened
1/4 cup(s) brown sugar
1 - egg
1 teaspoon(s) vanilla
1 cup(s) flour
1/2 teaspoon(s) baking powder
1/2 cup(s) dried cherries, coursely chopped
1/2 cup(s) white baking chips
1/2 cup(s) chopped pecans
DRIZZLE
1/4 cup(s) white baking chips
1/2 teaspoon(s) shortening

Steps:

  • Heat oven to 350. Grease 8" square pan.
  • Combine sugar, butter, brown sugar, egg and vanilla in large bowl. Add flour and baking powder. Beat until well mixed.
  • Stir in cherries, chips and pecans.
  • Spread evenly into prepared pan. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely.
  • Make drizzle by melting chips and shortening in microwave, stirring every 30 seconds until mostly melted; then stir until smooth.
  • Drizzle over bars. Cool completely and cut into bars.
