Steps:
- 1. Preheat oven to 350F. Grease and flour two nine inch round pans.
- 2. In a large mixing bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
- 3. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, and then remove from pans to a wire rack to cool completely.
- 4. *NOTE: You can use any chocolate cake mix you want if you don't have time to make it from scratch. (i use BC german chocolate)
- 5. For icing: In a mixing bowl add pudding mix, topping mix, and milk. (I always double the icing to make sure I have enough)
- 6. Directions for Icing cake: Smooth icing down sides and about 2 inches over, leaving the whole center free to spoon in your delicious cherry pie filing. Repeat process for second layer.
