Cherry Crumble (using fresh fruit) image

This is a wonderful recipe that my late husband's mother in London used to make for their family. I was able to get the recipe from her. It has become a HUGE hit here at any gathering or occasion!

Number Of Ingredients 11

1 cup(s) flour, sifted (1/2 white unbleached, 1/2 whole wheat)
1/4 cup(s) oatmeal, uncooked
1 cup(s) brown sugar, firmly packed
1/2 cup(s) butter, melted
1 teaspoon(s) cinnamon
1/4 cup(s) pecans, chopped
1 cup(s) granulated sugar
2 tablespoon(s) cornstarch
1 cup(s) water
1 teaspoon(s) pure vanilla extract
2 cup(s) fresh cherries, pitted

Steps:

  • stir together flour, oatmeal, brown sugar, pecans, melted butter and cinnamon until crumbly.
  • Combine sugar, cornstarch, water and vanilla, stirring until smooth. Add cherries and cook until mixture becomes thick and clear.
  • Pour cherry sauce into oven proof bowl. Top with crumble mixture on top of the sauce.
  • Bake at 350 degrees for 1 hour. Variation: Use Blueberries or rhubarb instead of cherries! Peaches, apples, strawberries. Most any fresh fruit can be used.
